One of my favorite things when I was younger was going to Texas to visit my Grandparents. Both sets lived in Houston. I remember waking up to the smell of bacon, sausage, pancakes, fresh biscuits and everything else on the huge buffet my grandmother made each day. Later in the day the smell of cookies would fill the air. She always made enough to feed 20 even though there were only 7 of us there.
Every time I make cookies it takes me back to my childhood. Walking down the stairs and into the kitchen, or running in from outside to watch her make cookies. I will be sharing some of my favorite goodies she made in the coming weeks.
This is my adaptation to my MeMe's Peanut butter cookies:
4 Tbsp butter (softened)
1 cup sugar
1 Tbsp creamy honey
1 egg
1 cup flour
1 tsp baking soda
1/2 cup creamy peanut butter
Cream the butter, sugar and honey.
Add the egg and mix well.
Add flour and baking soda.
Finally add the peanut butter.
Use a spoon to scoop out the dough and make balls and lay on ungreased cookie sheet. Take a fork and flatten the balls in a criss cross pattern.
Bake at 200 C or 350 F for about 10 min. until golden brown.

DeleteTamika, your memories of being at your grandmother's was lovely and it brought my own memories back. I loved those days! My Granny always had jars filled with cookies in her pantry and I remember thinking when I grow up, my kids are going to have jars filled with home made cookies too. And they did! Thanks for the memories. I love peanut butter cookies and thanks for sharing your recipe.

I miss real breakfast. I think that is a dying tradition (at least in our family.) I miss a true breakfast enjoyed around the table with family. (I think I'm especially missing it right now because I'm currently eating my pathetic breakfast...Cheddar & Sour Cream Lays...don't ask!

ReplyDeletefunny you mentioned that. The same day I made 6 with reses minis inside. We can't get them here and my friend gave me 3 from a pack someone sent to her.
