Saturday Brunch

We made plans to have some of our friends over for brunch this weekend. They still have not met baby V and it has been a really long time since we have spent time with them. In fact the last time I saw my sweet friend was when she threw a surprise baby/prayer shower the night before I checked into the hospital to deliver V.

I found this yummy casserole via Pinterest and could not wait to try it. I made a few changes like using Topfen instead of ricotta, and dried instead of fresh basil. I also added fresh parsley and used less zucchini. It tasted awesome and I would highly recommend it to anyone interested. I have always wanted to try frittata. This is basically just that. It was so good even the kids loved it.





I also wanted to serve something sweet. I debated over Scones, or Cinnamon Rolls... I decided to make my own little creation. Cinnamon roll casserole.  Ha! I just made these unrolled. They tasted so much like cinnamon rolls that I decided this was the perfect shortcut and solution. 

I laid the crescent batter on the bottom of a greased pan, topped with marshmallows and a 2nd layer of crescent rolls. I poured melted butter and cinnamon sugar on the top and baked according to the crescent can. They were sooo yummy. Needless to say that idea paid off!!


As it turns out our friends had to cancel due to a last minute emergency. My family really enjoyed the brunch though and that made my heart smile. It was worth it! I love when they enjoy what I serve them.

We spent the rest of the day relaxing and spending time with one another. That is a perfect Saturday in my book!
