K's Strawberry Cake

September is a busy month at our house. There are 3 birthdays, a names day and usually several business trips. I have been busy today trying to make preparations for a week of Celebrations.  My son loves the color red, so when I asked him what kind of birthday cake he wanted his reply was strawberry. 

At first I was worried because I was unsure what that meant to him. Then I started to look at recipes and I was concerned that everything called for Strawberry jello. You can't get that here. After reading through several recipes and looking at the store for ideas, I came up with a recipe we all enjoyed. 

2 c. sugar

2 1/2 c. flour

2 tsp. bkg powder

2 eggs

3/4 c. oil

1 c. milk

3/4 c. sweetened mashed strawberries

4 drops red food coloring

37 g. strawberry pudding mix

Mix everything together and pour into greased cake pan.

Bake til golden brown at the top (25-30 min.)

icing:

melted butter

pudding mix

powdered sugar

milk 

Mix to desired taste and flavor pour on cooled cake.
